2 Sweet Potatoes, chopped small
1/2 Onion, Chopped
2 Tbsp Butter
500ml Chicken Stock
2 Cloves Garlic, Chopped
1/4 Tsp Cumin
Salt and Pepper to taste
1 Leek, Chopped
2 Bay Leaves
Makes Three Servings.
1. Melt Butter in pot and add Onion and Garlic. Cook for 5 minutes.
2. Add Sweet Potato and stir together, then add Salt, Pepper and Chicken Stock and cover.
3. Cook for around 20 minutes or until Sweet Potato is tender.
4. Remove Bay Leaves and blend until smooth.
