Peanut Butter Pasta

2 Chicken Breasts, Chopped
85g Pasta of Choice
50ml Chicken Stock (1/3 Stock Cube)
2 Cloves Garlic, Grated
1/2 Tbsp Grated Fresh Ginger
1 Tbsp Natural Peanut Butter
1/2 Tbsp Fish Sauce
1/2 Tbsp Water
1/2 Tbsp Honey
1/2 Scallion, Chopped
Salt and Black Pepper to Taste


Chopped Peanuts to serve.
Add 50g Frozen Broccoli alongside Chicken.


1. Mix together everything but the the Chicken and Pasta in a bowl and set aside.

2. Cook Pasta per directions and drain.

3. While Pasta is cooking, heat some Olive Oil in a pan and fry Chicken until just cooked through.

3. Add Sauce to Chicken and stir to combine, heat for a few minutes until Sauce has thickened then add Pasta and stir to combine and serve.
