Funny to think that at one point I couldn’t stand sweet potato and now I’d be at a loss without it. I always advocate trying food multiple times at different stages of your life because you never know how you tastes will change or what will suddenly appeal to you. The garlic in this cuts through the sweetness of the sweet potato.
1 Sweet Potato, Cubed
1 Tbsp Butter
4 Cloves Garlic, Grated or Chopped Fine
Salt and Pepper to Taste
1. Bring a steamer of water to the boil and add the cubed Sweet Potato. Cook for around 15 minutes or until tender.
2. Set aside Sweet Potato and then drain the Water out of the pot and add Butter, Salt and Pepper and stir until Butter has melted then add Garlic and cook for a minute or two. Add the Sweet Potato to the Pot and mash with a fork and serve.
