4 Medium Courgettes (If too large they could be bitter), chopped
1/2 Onion, Chopped
2 Tbsp Butter
500ml Chicken Stock
Salt and Black Pepper to taste
Makes Two Servings.
1. Melt Butter in pot and add Onion. Cook until translucent.
2. Add Courgette and stir together, then add Salt, Pepper and Chicken Stock and cover.
3. Cook for around 20 minutes or until Courgette is tender.
4. Blend until smooth.
