Coconut Alfredo

I stopped using streaky bacon because it took so long to render down and I preferred using a non-stick pan for convenience, hence the quick version. There’s not much between them really.

Ingredients

1 Slice Back Bacon or Two Rashers of Streaky Bacon
1 Whole Chicken Breast
85g Pasta
1/4 Tsp Basil
1/4 Tsp Parsley
1/8 Tsp Garlic Granules
1/8 Tsp Oregano
1/16 Tsp Thyme
Salt and Black Pepper to Taste
1 Tbsp Olive Oil
160ml Coconut Milk

Method

1. Mix together Herbs and set aside.

2. Heat 1 Tbsp Olive Oil in a skillet on a medium heat. Add Chicken and Bacon and cook until cooked through, about 15 minutes. Remove Chicken and Bacon and wrap in tinfoil to let it rest. If there’s too much fat drain the skillet and reserve the fat.

3. When 5 minutes remain for Chicken and Bacon to cook start cooking Pasta per instructions. Should take around 10 minutes, drain and set aside.

4. When Chicken and Bacon is removed add Coconut Milk to Skillet let warm up (Don’t boil!). Then add Herbs and stir continuously for about 5 minutes.

5. When Sauce has thickened remove Chicken from tinfoil and chop into small pieces and add to sauce, add drained Pasta, stir together and stir in chopped Bacon just before serving.

Quick Version

Ingredients

Two Rashers Lean Bacon (Fat won’t have time to render), Chopped
1 Whole Chicken Breast, Chopped
85g Pasta
1/4 Tsp Basil
1/4 Tsp Parsley
1/8 Tsp Garlic Granules
1/8 Tsp Oregano
1/16 Tsp Thyme
Salt and Black Pepper to Taste
1 Tbsp Olive Oil
160ml Coconut Milk

Method

1. Mix together Herbs and set aside.

3. Start cooking Pasta at the same time as Chicken and Bacon. It should take around 10 minutes, drain and set aside.

4. When Chicken and Bacon is removed add Coconut Milk to pan let warm up (Don’t boil!). Then add Herbs and stir then cook until Sauce has thickened. Finally toss in Chicken, Bacon and Pasta and stir to combine.
