1 Cup Sugar
1/4 Cup Water
1. Dissolve Sugar in water within a saucepan over medium heat.
2. Once sugar has dissolved, bring to a boil. Do not stir. Swirl the mixture till the colour of the syrup turns deep golden. Be careful not to burn the syrup. Should be slightly thick.
3. Immediately remove from heat. Quickly pour mixture over a tray lined with baking paper. (Optional: Add chopped Chocolate and let it melt slightly then stir the top)
4. Leave to cool.
5. Once cold, break the caramel into shards. Caramel shards can keep for several days in an airtight container.
