I seem to have forgotten to add the roasted seeds recipe. Just add the seeds to water and let them float to the top, leaving behind the fibres. Then dry and toss with a drizzle of Olive Oil and a pinch of Sea Salt. Spread out onto a lined tray and bake for 10-15 minutes at 175c (Fan) or until they feel dry or they start to pop. Let cool and enjoy.
1 Butternut Squash, Cubed Salt and Pepper to taste Optional: 1 Tbsp Butter
For Cheesy Mash add 2 Tbsp Butter and 100g Grated Red Cheddar and add when Mashing.
1. Bring a steamer of water to the boil and add the cubed Squash. Cook for around 20 minutes or until tender.
2. Drain out the Water and add Butter, Salt and Pepper and stir until Butter has melted. Mash with a fork and then serve.
